Super yummy squash soup
Course: Soup


  • 2 cups grated squash
  • 2-4 tablespoons flour
  • salt to taste
  • pepper to taste
  • 4 cups chicken stock or vegetable stock (or water)
  • 1/4 teaspoon nutmeg


  • In a medium size pot, saute grated squash until tender.
  • Sprinkle 2 tablespoons flour over the top of the squash and stir until well combined, and not lumpy. If needed, add additional flour. This creates the roux to thicken the soup. Add salt and pepper to taste. Cook until the roux has browned slightly.
