What do you do when life gives you lemons? Make candied lemons, of course!
- 2 cups water
- 2 cups sugar
- 2-3 lemons
- granulated sugar optional
- Slice lemons thinly, 1/8″-1/4″. It doesn’t have to be exact. Discard all seeds as well as the ends of the lemons.
- In a shallow saucepan, combine your water and sugar. Heat over medium heat until sugar dissolves.
- Once sugar is dissolved, add lemon slices to the simple syrup. Simmer over medium-low until lemon slices are translucent, stirring occasionally to make sure that lemons stay submerged in the syrup. Remove slices to waxed paper to dry. Sprinkle with sugar, if desired.
Thicker lemon slices will take longer to become translucent than thinner slices.
